Jazzy Jae’s Crab Cakes



1 lb backfin crab meat

1 small-medium loaf French Bread

1/2 cup chopped green onions

1 teaspoon or a little more lemon zest

1/4 teaspoon red pepper

1 1/2 tablespoons Hellman’s Mayonnaise

1 tablespoon olive oil

Salt and lemon pepper to taste


In a large bowl, take bread and cut open.  Pull pieces of the “inside” of the bread out with your hand and place in bowl until all used.  Discard the outer layer.  Add all the other ingredients except the olive oil and mix well.  Form crab cake patties.  In the saucepan heat the olive oil and cook crab cakes until golden brown on each side, about 4-5 minutes each.  Serve.
