Ingredients
1 tablespoon butter or olive oil
1/2 cup chopped onions
1 1/2 teaspoons curry powder
1/2 teaspoon red pepper
2 pounds sweet potatoes, cut into pieces
1 apple…peeled and chopped
3 cups chicken broth
1/2 cup heavy cream
1/4 teaspoon nutmeg
1 teaspoon brown sugar
1/2 teaspoon garlic powder
Salt and pepper to taste
Procedure
Saute onions and curry in butter or olive oil for about 5-10 minutes. Add sweet potatoes, apple and broth. Simmer for about 20-30 minutes on medium heat until potatoes and apple become somewhat tender. When done, pour the mixture through a strainer saving the juice. Add potato mixture to food processor or blender and add some of the juice. Puree mixture until smooth. Add a little more juice if not smooth. Return mixture to pan and add the cream, red pepper, brown sugar, nutmeg, garlic powder and salt and pepper to taste. Stir and simmer on low heat for about 5-10 minutes longer. Serve.
